Yemeni Mutton Chops Mandi

Ingredients:

  • FOR SPICE:
  • Coriander seeds- ⅙ cup
  • Cumin seeds- ⅙ cup
  • Whole Black peppercorns- ⅛ cup
  • Whole cardamom- 1 tbsp
  • Whole cloves- 1 tsp
  • Whole cinnamon- 2 inch slice
  • FOR MARINATING MUTTON:
  • Mutton shoulder 1Kg
  • spice- 2 tbsp
  • Butter, melted- 3 tbsp
  • Turmeric powder- ½ tsp
  • Ground pepper- ½ to 1 tsp
  • Salt- 2 to 3 tsp
  • FOR MAKING RICE
  • Basmati rice- 2½ cup
  • Oil- 1½ tbsp
  • Chopped Onion- 1
  • Whole cardamom- 3
  • Whole cloves- 2
  • Whole cinnamon- 2 inch slice
  • Bay leaves- 3
  • Green chilies- 4 or 5
  • Whole black peppercorns- 1 tsp
  • Turmeric powder- ¼ tsp
  • Saffron strands- 1 tsp soaked in 1½ tbsp water (optional)
  • Water- 4½ cups
  • Salt- to taste

Directions

  • Making Spice:
  • In a saucepan, roast all the ingredients over medium heat for 3 to 4 minutes or till aromatic. Do not burn the spices.
  • Let the roasted spices cool down and grind to a fine powder. Keep aside.
  • Making Mutton:
  • In a bowl, combine 2 tbsp with ½ tsp turmeric powder, ground pepper, salt and melted butter.
  • Using a brush, spread the spice rub over the mutton chops
  • Place the mutton in a pan, cover with plastic wrap and refrigerate for 4 hours or marinate it overnight.
  • Making Rice:
  • In a small bowl, soak the saffron in water for an hour. Keep aside
  • Place a large pot over medium heat, add oil.
  • Add onion, season with salt and cook till translucent.
  • Add whole cardamom, cloves, cinnamon, bay leaves, peppercorns, green chilies, rice, water, and enough salt. Combine well. Cook till water disappears.
  • Baking the mutton and rice
  • Preheat oven to 200°C. Grease a wire rack, place it on a pan. Place a marinated mutton shoulder on a wire rack and bake for 35 min or an hour. Make sure you flip mutton shoulder in between to be baked properly from both sides. Remove from the oven and shallow fry on high heat for beautiful reddish-brown color
  • Spread the rice over a platter and place the mutton over the rice.
  • If you want, you could garnish with roasted almonds or chilis.
