Chicken Tikka Masala Biryani

Ingredients:

For rice:

  • Sella rice 750 gms
  • Whole spices (Bay leaves, Cinnamon, Cumin)
  • National Salt as required

For Masala:

  • Chicken 1 kg
  • Oil 1 cup
  • Ghee 4 tbsp
  • Ginger garlic paste 1tbsp
  • Brown onion 1cup
  • Onion chopped 2 medium
  • Potatoes 3 to 4
  • Green chili 8 to 10
  • Coriander leaves 1/4 bunch
  • Mint leaves 2tbsp
  • Tomatoes 4
  • National Tikka Masala 1 packet
  • National Biryani Masala 1 packet
  • National Garam Masala powder 1/2 tsp
  • Mace & Nutmeg powder 1/4 tsp
  • Yogurt 1 cup
  • Water 2tbsp
  • Yellow color few drops
  • Cumin seeds 1tsp
  • Cloves 6
  • Cardamom 4
  • Star anise 2

Directions

  • Soaked Sella rice for 2 hours, then boil with salt, and whole spices, don't boil completely.
  • Now for the gravy, heat oil, add chopped onion, and fry them until light golden color. Now add all the spices mentioned above.
  • Add chicken, ginger garlic paste, National Tikka Masala, and tomatoes and mix it well. Add water so the chicken cooks completely.
  • Now add potatoes, green chili, Garam masala, Mace & Nutmeg powder, and mix well.
  • Cook for about 10 minutes.
  • Now add brown onion and yogurt and mix it well, when the oil comes to the top turn off the flame.
    • For layering:

      • Take a big cooking pot and 2 tbsp ghee add half of the rice, National Biryani Masala, coriander, mint leaves, and again rice. Now mix kewra water with food color and pour over the rice. Add 2 tbsp melted ghee over the rice. Place your rice on dam for 15 minutes.
      • And serve!
