Aloo Ki Karahi

Ingredients:

  • Oil 3-4 tbsp
  • Potatoes medium cubes half kg
  • Ginger garlic paste 1 tbsp
  • National Salt 1 tsp
  • Red chili crushed 1 tsp
  • National Cumin seeds roasted & crushed half tsp
  • National Turmeric powder 1/4 tsp
  • Kashmiri red chili powder 1 tsp
  • National Garam Masala Powder 1/4 tsp
  • National Red chili powder half tsp
  • National Coriander seeds crushed half tsp
  • Tomatoes 4 medium
  • Water as req
  • Yogurt whisked 3 tbsp
  • Fenugreek leaves 1 & a half tsp
  • Ginger julienne cut, Green chili, Coriander leaves, and lemon slice for garnishing

Directions

  • In a wok, add oil, and potatoes and mix well on high flame until light golden brown for 3 mins.
  • Turn flame to low, add ginger garlic paste and mix well.
  • Add salt, red chili crushed, National Cumin Seeds, National Turmeric Powder, National Red Chili Powder, National Coriander Seeds crushed, and National garam masala.
  • Mix well and cook for 2 mins.
  • Add tomatoes and water and mix well.
  • Cover the lid and cook on low flame for 8 mins.
  • Add whisked yogurt, mix it well and cook on a medium flame for 2 mins until oil separates.
  • Add fenugreek leaves and chopped coriander, cover, and simmer on low flame for 2 mins.
  • Garnish with green chili, ginger, and coriander leaves, and serve!
